Grilled Pineapple Salsa

Let’s spice up this Fourth’s BBQ with a Mexican/Latin American theme to break up the monotony of the same old ketchup, mustard and BBQ sauce. I love me some salsa, but the store-bought stuff often lacks the freshness that is required to really surprise and delight.. I found this little gem at allrecipes.com. Add this on top of chicken, pork, fish, even burgers, or even the Mexican Hot Dogs from our last recipe post, maybe without the bacon? I’ll leave that up to you. Ingredients
  

  • 1/2 fresh pineapple sliced into half-inch pieces
  • cooking spray
  • 1 red bell pepper
  • 1 small sweet onion
  • 1/4 cup chopped fresh cilantro
  • 1 small jalapeno pepper finely chopped
  • 1 clove garlic
  • 1 tbsp lime juice
  • 1 tsp sugar
  • 1/2 tsp salt
  • ground black pepper to taste

Instructions
 

  • Preheat grill to medium heat and lightly oil the grate. Spray pineapple pieces with cooking spray.
  • Cook pineapple on the grill 5 to 10 minutes, until lightly browned and caramelized. Remove pineapple from grill and cool, then chop.
  • Mix the pineapple, red bell pepper, onion, jalapeno, cilantro, garlic, lime juice, sugar, salt, and black pepper together in a bowl; refrigerate until chilled and flavors blend, about 1 hour.
